How to cook peas and other legumes

 We will explain the different types of cooking legumes and the different methods for that, and I will start with peas


There are several ways to enhance their flavor: 
-1When boiling or steaming water, add fresh herbs such as mint or tarragon to enhance flavor
2Pot cooked peas  with a  pinch of sugar to enhance their natural emphasize sweetness. 
3Make a salad with boiled peas. They are particularly tasty with bacon and a creamy dressing.Cook with spices, from curries to herbs de Provence. 

Think Beyond the Side 

Dinner TV's Buttered Peas were a fantastic side dish, but there are so many other ways to use peas. a handful of peas in the mixture. Try this creamy pasta and peas recipe for an easy fix.I also think chilled peas can add some substance to salads without overwhelming the dish. This chopped vegetable salad makes it possible. Finally, I would be remiss if I didn't mention the chicken pot pie. Peas, carrots and creamy chicken in a puff pastry - delicious!

Types of Peas

As you walk down the produce aisle, you will find different types of fresh peas. There are snow peas and snow peas that can be eaten whole (and are not the type of pea we are dealing with here). You will find much less common garden peas, also called sweet peas or English peas. These pods hide tender, round peas.

You're more likely to find them at a farmer's market (or in your own backyard). Grocery stores don't usually buy them  because garden peas  lose their sweetness a few hours after harvest and the harvest season is short. However, frozen peas are plentiful and one of the highest quality frozen vegetables around. Its taste and texture are almost as good as fresh.

How to Shell Fresh Peas

They are flash frozen immediately after harvest to preserve their sweetness. Fresh shelled  and frozen peas are interchangeable in recipes. Start by removing the stem end of the pod with your fingers. the pod, starting from the stem. Open it up and carefully scoop out the broad peas.

Test Cooking Tip: 1 pound of fresh pod peas  yields about 1 cup (6 ounces) of shelled peas
